happy meal idea

No, not the kind that comes in a box with a toy. This is just something I made for dinner that was easy and tasty. In a skillet with some canola: frozen corn, baby cord, parisian carrots and broccoli mix. On the other side of the skillet: two frozen tilapia fillets sprinkled with lemon pepper and dill. Heat it all on medium heat until the tilapia flakes (I flip it when the bottom side turns white) Stir the veggies around; they'll get some of the seasonings on them too.
In the oven: hand-cut sweet potato fries from 4 small organic spuds, tossed in oil, salt and pepper. Bake in a single layer for 15 minutes, stir and then 15 more (if you can wait that long.)
This meal serves two. Or in my case, it served one for two meals. Sorry no pictures this time, I ate it up before it could be photographed.

Interesting sidebar: while "baby carrots" sold in the produce section are actually adult carrots cut and spun into baby-cut pieces, parisian carrots are actually little round carrots. I think they all taste the same though.

This photo has the fries... but salad instead of mixed veggies and shrimp and scallops instead of tilapia.
